This is an interesting recipe. At first glance, I didn’t think it was going to work. Upon completing the dish and tasting it, however, I discovered I was wrong. Not only does it work, it works extremely well.
This is another in a long line of recipes that Laura found online. She’s been scouring the web in an attempt to find the best and most unique dishes available. Beyond this one, we’ve got two more for this round, so keep on reading.
There are a lot of parts to this recipe that seem, at first glance, to compete with one another. As I was browsing through the ingredients, I tried to imagine how the flavors would come together. Apples, brown rice, onion, vinegar – it was a challenge. When I took my first bite though, I found that the flavors and textures worked very well among one another. The acid in the vinegar stands alone while the sweetness and texture of the apple adds a lot. The rice and the onion are unique in that they add bulk and a very distinct outlying component, if that makes any sense. My suggestion is to give this recipe a try to see if you like it. I certainly did because it distinctly marks the season. It includes pumpkin and many other ingredients that give the dish character. It’s easy enough to put together, so I encourage you to make yourself a few bowls.
2 Cups Cooked Brown Rice
1 Cup Canned Pumpkin
2 Tablespoons Honey
1 1/2 Tablespoons Apple Cider Vinegar
1/4 Teaspoon Cinnamon
1 Honeycrisp Apple, Cored & Diced
1 Sweet Onion, Chopped
2 Tablespoons Raisins
1/2 Cup Unsalted Walnuts, Crushed
2 Tablespoons Extra-Virgin Olive Oil
1 Tablespoon Parsley Flakes
1/2 Teaspoon Salt
1/4 Teaspoon Ground Black Pepper
1 Cup Chickpeas

Add Rice to Bowl
Add the cooked rice to a large bowl. Set aside for later use.
Make Pumpkin Mixture
In a medium sized bowl, add the pumpkin, honey, vinegar and cinnamon. Mix well.
Once the mixture is combined well, heat it for a few minutes in the microwave to warm the ingredients.
Add Pumpkin Mix to Rice
Next, add the warm pumpkin mix to the brown rice in the large bowl. Use a rubber spatula to fold the ingredients together thoroughly.
Add (almost all) Remaining Ingredients to Large Bowl
Your apple and onion should be prepped already. Here’s a photo of mine mixed in a small bowl.
Add the apple and onion to the large bowl. Then, add in the raisins, walnuts, olive oil, parsley, salt and pepper and mix well.
Plate & Add Chickpeas
Warm the chickpeas in the microwave for about a minute to warm them. Then, divide the pumpkin mixture equally between the bowls. After that, divide the chickpeas equally among the bowls as well. Serve.
The Final Dish
I’d say this is a pretty good looking dish. It certainly is filling. To top things off, it’s also vegan, so if you’re into vegan cooking, this is for you. Give it a try and let me know what you think about it.
