Cucumber, Tomato & Herb Salad with a Creamy Vinaigrette Dressing Recipe

The temperatures have fallen in Maine and I’m sad to say that our garden season is coming to a close. There aren’t many tomatoes left and the zucchinis are growing at a slower pace. This doesn’t mean that we aren’t still stuffed to our gills with these two vegetables, because we are; it’s just to say that the recipes that I share that have to do with our garden will soon be coming to a close. We’ve managed to fill an entire chest freezer with food though and I feel very good about that.

I was flipping through recipes a few days ago when I found the one I’ll share below. I happened to have everything on hand, so I decided to prepare what ended up being a wonderful tomato, cucumber and herb salad. A friend gave me a bunch of huge cucumbers last week, so I was eager to use them in something. And just because I’m clever, I even added some diced zucchini in as well.

Cucumber, Tomato & Herb Salad with a Creamy Vinaigrette Dressing Recipe

The Recipe

This is a simple recipe that can be prepared in minutes. All it requires is a bit of prep work and some combining of ingredients. Because of the dressing in this salad, the flavors of the vegetables really came alive. We added this salad on top of our regular lettuce based one and I thought that resulted in being a great idea. This salad is flavorful with some interesting texture, especially with the zucchini in it. That added some firmness to things.

Ingredients

Serves: 4

For the Salad

1 Medium Sized Cucumber, Diced
1 Medium Sized Zucchini, Diced
1 Pint Cherry Tomatoes, Halved
1/4 Cup Fresh Parsley, Chopped
1/4 Cup Fresh Basil, Chopped
1/4 Cup Fresh Mint, Chopped
2 Tablespoons Fresh Chives, Chopped

For the Vinagirette

1/4 Cup Mayonnaise
1 Tablespoon Lemon Juice
2 Tablespoons Apple Cider
1/2 Teaspoon Salt
1/4 Teaspoon Ground Black Pepper

Step-by-Step Instructions

I’d like to thank Le Coup de Grace for this recipe. I found this little nugget of wonder a while back and have been keeping it in my back pocket until I was ready. The website has some incredible recipes, so I’m looking forward to preparing and sharing them.

Combine the Vegetables

Add all the salad vegetables to a large bowl and mix everything together well.

Prepare the Vinaigrette

Add all the vinaigrette ingredients to a medium sized bowl and whisk together well.

Add Everything Together

Add the vinaigrette to the rest of the salad in the large bowl and mix until the veggies are coated with the mayonnaise mixture.

Plate & Serve

Divide the salad between plates any way you wish. Season with salt and pepper if necessary and serve. Enjoy!

The Final Cucumber, Zucchini & Tomato Salad

I told you this one was easy. As long as you have everything prepped and ready to go, it’s basically just mixing it all together and eating it. I loved this salad and will definitely make it again.
