Creamy Slow Cooked Tortellini with Shrimp & Spinach

Take a look at the photos for this dish. Doesn’t it look good? I was wondering how I was going to take pictures of what I prepared because I didn’t think the colors of the ingredients were all too distinct. Apparently, they are distinct enough because the dish looks pretty great! It tastes excellent too. Overall, I’m completely happy with what I’ve done hear and believe it or not, I’ll still be eating the leftovers of this tortellini shrimp feast tonight.

Creamy Tortellini Dinner

The Recipe

The best part about this dish is that it’s slow cooked. There’s virtually no skill that’s necessary to prepare any of this. The tortellini is store bought from the freezer aisle and everything else is either frozen or canned. Okay, there’s a tiny bit of prep, but it’s almost nothing.

For this recipe, I used cheese tortellini. I bought one bag of it frozen and just dumped that in my big cast iron skillet, along with some other ingredients. As it was cooking, I thought to myself, “Wouldn’t some shrimp be nice in here as well?” So I added a pound of frozen shrimp. I know that it’s some sort of sin to combine cheese and seafood, but I’ll say that it turned out very good. I can’t complain. The onion, tomatoes and spinach helped as well. I think you’re going to enjoy this one. It takes about an hour to fully cook and after that, it’s good eating.

Ingredients

Serves: 8

1 Pound Frozen Shrimp, Peeled
1 Sweet Onion, Diced
4 Ounces Frozen Spinach
28-Ounce Can Diced Tomatoes, with Juice
8 Ounces Cream Cheese, Cubed
1 Teaspoon Italian Seasoning
1 Pound Frozen Tortellini
3 Cups Vegetable Broth
1/4 Cup Tomato Paste
1/4 Cup Parmesan Cheese
1/2 Teaspoon Salt (or to taste)
1/4 Teaspoon Ground Black Pepper

Step-by-Step Instructions

I’d like to thank Spend with Pennies for this recipe. She wanted to use sausage and I wanted to use shrimp. I bet they were both awesome.

Tortellini Dinner with Shrimp & Spinach

Add Ingredients to Skillet

You’ll need a large skillet for this recipe. I used my 12″ Lodge cast iron skillet, so you’ll need something at least that size.

Add all of the ingredients except for the Parmesan cheese to the skillet and turn the heat to medium-high. Wait a few minutes until you see the liquid in the pan begin to simmer and then reduce the heat to low. Keep the pan over the low heat for about an hour. The pan should be covered. At the end of the hour, stir the ingredients so everything is combined nicely. That’s all there is to it. When that’s done, divide the contents of the skillet between plates and then sprinkle some Parmesan cheese over each plate, serve and enjoy! Let me know what you think.
