Watermelon, Tomato & Feta Cheese Salad Recipe

A few days ago, we were looking through a bunch of websites in an attempt to find recipes that would help us use up our overabundance of zucchinis. By the way, we picked one yesterday that weighed every ounce of five pounds. The thing is the size of a small dog. Or a large cat. Whatever. It’s huge. It’s now resting on our counter top waiting to be eaten. I think it’s going to go in some zucchini lasagna that I have planned for next week.

Anyway, as we were browsing through all the recipes and websites that we uncovered, one completely unrelated recipe jumped out at me. It was for a watermelon salad. I thought about how neat it would be to eat watermelon again, since I hadn’t had any in such a long time. I put the recipe on my list and I prepared the salad last night. It was delightful.

Watermelon, Tomato & Feta Cheese Salad Recipe

The Recipe

I have never tasted watermelon alongside tomatoes, basil, red onion, salt and pepper. I have to tell you, it’s pretty good. Add some feta cheese to the mix and you have yourself something special. The salad is really easy to put together. It’s just as you would expect; pretty much just combine all the ingredients. I will say that you should prepare the vinaigrette beforehand though, as opposed to what the instructions in the recipe called for. The author said to simply drizzle some olive oil and vinegar over the salad towards the end. Make the vinaigrette properly. That’s my advice. Don’t drizzle.

Ingredients

Serves: 4

4 Cups Arugula or Other Light Lettuce
4 Cups Watermelon, Cut into 1-Inch Cubes
16 Ounces Cherry Tomatoes, Halved
1/8 Cup Basil Leaves, Coarsely Chopped
1/8 Cup Red Onion, Diced
4 Tablespoons Extra-Virgin Olive Oil
2 Tablespoons White Balsamic Vinegar
1/4 Teaspoon Salt
1/4 Teaspoon Ground Black Pepper
1/4 Cup Feta Cheese, Crumbled

Watermelon & Feta Cheese Salad Recipe

Prepare the Vinaigrette

In a medium size bowl, combine the olive oil, vinegar, salt and pepper. Whisk these ingredients together well.

Construct the Salad

On four different plates, divide the arugula. Then, divide the watermelon, tomatoes and red onion and place those ingredients on top of the lettuce. After that, sprinkle each salad with the basil and feta cheese and then top things off with the vinaigrette. Just drizzle that over the tops of the salads and serve. It’s that easy. If you’d like, you can season with extra salt and pepper.
