Shrimp Roll Recipe

October 15, 2019

I was looking for something to whip up quickly for dinner last night when I realized that I had all the necessary ingredients for some delicious shrimp rolls. I’ve made these in the past, but I’m not sure if the recipe I used last night is exactly the same as the previous one. Either way, I still would have posted what I prepared here. That’s just the way I “roll.”

Easy Shrimp Roll Recipe

The Recipe

Basically, all it takes to put this wonderful shrimp roll together is some cooking of the shrimp and red pepper and then some mixing of a few other ingredients. It’s a real no-brainer and the result is just so perfect. Great tasting shrimp with veggies in a mayonnaise sauce that truly hits the spot. Just be sure to season to taste because if you don’t, the flavors simply won’t be there.

Ingredients

Makes: 4 Rolls

1 Tablespoon Butter
1 Red Bell Pepper, Diced
2 Pounds Shrimp, Cleaned and Peeled (No Tails)
1 Tablespoon Lemon Juice
3/4 Cup Mayonnaise
1 Tablespoon White Wine Vinegar
1 Teaspoon Dijon Mustard
1/2 Teaspoon Sugar
1/2 Teaspoon Salt
1/2 Teaspoon Ground Black Pepper
2 Celery Stalks, Sliced
2 Scallions, Sliced
4 Split Top Hot Dog Rolls, Outside Buttered and Toasted

Step-by-Step Instructions

I’d like to thank the Food Network for this recipe. While I didn’t follow it exactly, they were my inspiration.

Cook the Pepper & Shrimp

Warm a skillet over medium heat. Add the butter and red pepper to it and cook the pepper for about three minutes until it begins to soften. If the shrimp isn’t already cooked, go ahead and add that in too after the three minutes. Continue cooking for a few more minutes until the shrimp turns pink and it’s no longer translucent. When finished, turn off the heat and drain any liquid from the pan.

Combine Other Ingredients

In a large bowl, add in the lemon juice, mayonnaise, vinegar, mustard, sugar, salt and black pepper. Combine these ingredients with a fork. Then, add in the celery, scallions and the shrimp and red bell pepper from the skillet. Mix everything together until the shrimp are well coated with the mayo mixture. At this point, you can season to taste.

Plate, Serve & Enjoy

Divide the contents of the bowl between hot dog buns. Serve and enjoy!

You see? This was super simple and it didn’t even require many ingredients at all. If you purchased cooked shrimp, just make sure the tails are off and toss them in the skillet with the red pepper to warm them up. No need to cook them since they’re already cooked.

Give this recipe a try and let me know your thoughts. Thanks for reading!
