Salmon Burgers with Cabbage Slaw Recipe

In our household, our go-to protein source is usually a nice piece of salmon. Salmon is low in calories and packed with heart-healthy omega-3 fatty acids, vitamin B12, as well as selenium and choline. Other benefits include an array of anti-inflammatory advantages that may play a role in a reduced risk of depression and anxiety. The Vitamin D found in salmon may also play a role in preventing autoimmune disease.

Salmon With Cole Slaw

The Recipe

Being that we enjoy salmon so frequently, we decided to give this salmon burger and slaw recipe from Pinch of Yum a try. For this recipe, you can use leftover steamed, poached, grilled, or baked salmon. If you don’t have these on hand, you can also use canned salmon. This dish is delicious, nutritious and fairly simple to prepare.

Ingredients

Serves: 4

Salmon Burgers:

12–14 Ounces Cooked Salmon
2 Eggs
1/2 Cup Breadcrumbs
1 Teaspoon Salt
1/2 Teaspoon Garlic Powder
1/4 Cup Chopped Fresh Herbs, Like Chives, Parsley, or Dill
1 Tablespoon of Lemon Juice
Olive Oil for Pan-Frying

Cabbage Slaw:

1 Head Green Cabbage, Finely Shredded
1 Cup Plain Greek Yogurt
2–3 Tablespoons White Distilled Vinegar (More to Taste)
1 Teaspoon Salt
1/2 Teaspoon Garlic Powder
1/2 Cup Chopped Fresh Herbs Like Chives, Parsley, or Cilantro
A Drizzle of Olive Oil

If you are using salmon fillets, go ahead and flake them apart. I decided to use canned salmon instead. Mix all of the salmon burger ingredients together and form them into three or four medium-sized patties. Now that your patties are ready, heat the olive oil over medium heat in a pan. Fry the burgers on each side until each side is golden brown and crispy. Place the burgers on a plate lined with a paper towel and sprinkle them with salt. I used a cast iron pan for frying and the burgers came out beautifully.

Making the Slaw

I used a Cuisinart food processor to shred the cabbage. Feel free to do this as well if you have one, as it’s so much easier than shredding by hand. Once finished, mix all of the slaw ingredients together. Taste and adjust the ingredients to your liking.

Next, place your hot salmon burgers on a bed of your creamy slaw. Add an extra dollop of extra yogurt and more herbs. Go ahead and enjoy.
