Pasta with Spinach, Walnuts & Mushrooms Recipe

There’s nothing tricky about this recipe. It’s super simple and I have to tell you, it feels a bit old world. I’ve always enjoyed pasta dishes that were a little different than the more traditional ones that call for tomato sauce. In this dish, we’ve got walnuts and mushrooms and Parmesan cheese. I love this recipe because it’s so easy to put together and because it tastes so good.

Walnuts, Garlic, Mushrooms & Pasta in Cast Iron Skillet Recipe

The Recipe

This is a simple recipe that calls for only a few ingredients. Spiral pasta, garlic, onion, mushrooms, spinach and walnuts, among a few other things. If you like pine nuts or pecans, you can use them just the same. The result of a short time of cooking is a wholesome filling meal that tastes great. I think you’ll enjoy this one.

Ingredients

Serves: 4

2 Cups Dried Spiral Pasta
1/2 Cup Olive Oil
2 Garlic Cloves, Minced
1 Onion, Sliced
3 Large Mushrooms, Sliced
8 Ounces Fresh Spinach
Handful Walnuts
1/3 Cup White Wine
Salt
Ground Black Pepper
Parmesan Cheese for Garnish, Shaved

Spinach, Walnuts & Pasta Recipe in Skillet

Cook the Pasta

Fill a pot half way with water and add about 1 teaspoon of salt. Turn the heat on high until the water is boiling. Add the pasta and cook for 10 minutes. When finished, strain the pasta in a colander.

Saute Garlic, Onion & Mushroom

Warm a large skillet over medium heat. Add the oil to the pan and then add the garlic and the onion. Cook these two ingredients for about two minutes and then add in the mushroom. Continue cooking, stirring occasionally, for about five more minutes.

Add Spinach, Nuts & Wine

Reduce the heat to medium-low. Then, add the spinach to the pan and stir until it’s wilted. That takes just a few minutes. Then, add the nuts and the wine and continue cooking for another minutes or so. Season with salt and pepper to taste.


Add the Pasta, Season & Serve

Next, turn off the heat. Add the pasta to the skillet and mix everything together. Season to taste again and then sprinkle some Parmesan shavings on top and use the skillet as a serving bowl. Personally, I like that look. Bring to the table and dig in!
