As you may have guessed, I’ve been in the mood for Mediterranean style food recently. For this round of recipes, I’ve pulled almost all of the dishes I have shared on this blog from the same place. It’s a really incredible cookbook that has yet to disappoint me. Today’s recipe is another great one. It’s for a country-style Greek salad.
The Recipe
These salads are timeless. They’re basically a collection of fresh ingredients harvested at just the right time of year. The ingredients include exactly what you would expect; tomatoes, onions, olives, red peppers, herbs and oil. There’s nothing fancy about this salad, but it’s very good. I’m almost positive you’ve tried something like it before and I’m positive you’ll enjoy this one. That is, if you like Greek salads.
Ingredients
Serves: 6-8
6 Tablespoons Extra-Virgin Olive Oil
2 Tablespoons Red Wine Vinegar
1 Teaspoon Dry Oregano
1 Teaspoon Dry Basil
1 Tablespoon Lemon Juice
1 Teaspoon Garlic, Minced
1/2 Teaspoon Salt
1/4 Teaspoon Ground Black Pepper
2 Cucumbers, Trimmed, Peeled and Sliced Thin
1/2 Sweet Onion, Sliced Thin
6 Ripe Tomatoes, Cut into Wedges
1 Cup Jarred Roasted Peppers, Sliced into Strips
1/2 Cup Pitted Kalamata Olives, Chopped
1/4 Cup Parsley, Chopped
1/4 Cup Fresh Mint, Chopped
5 Ounces Feta Cheese, Crumbled
Step-by-Step Instructions

Prepare the Vinaigrette
In a medium sized bowl, combine the olive oil, vinegar, oregano, basil, lemon juice, garlic, salt and pepper. Whisk these ingredients together well.
Marinade the Cucumber & Onion
Add both the cucumber and onion. Toss these vegetables until they are completely coated with the vinaigrette.
Let these vegetables marinade for at least 20 minutes.
Combine Remaining Ingredients
In a large bowl, combine the tomatoes, red peppers, olives, parsley and mint.
Then, when ready, add the cucumber and onion mixture to the large bowl and toss well.
Plate & Serve
Divide the salad between plates or transfer to a large platter. Then, sprinkle the feta cheese over everything and enjoy!
The Final Greek Salad
This salad didn’t take much effort to put together at all and I really think it would be perfect for a summer BBQ or something like that. Just throw everything in a huge bowl and mix it up together.
