Let’s see, I think there’s a holiday coming up, but I just can’t remember which one it is. Hmmm…oh yeah, it’s St. Paddy’s Day! Or, Saint Patrick’s Day for all of you who like to keep things official. Now, you know as well as I do that St. Paddy’s day requires certain food to be made. Good food too. Food such as corned beef and cabbage, Irish soda bread and those awesome mashed potatoes with the cabbage and kale in them. Sometimes these Irish mashed potatoes also include scallions for looks and flavor, but really, it’s all about the cabbage and butter and potatoey goodness. I really do love this holiday. Oh yeah, by the way, these Irish potatoes have a name; they’re called Colcannon potatoes.
The Recipe
These potatoes are so easy to put together. All that’s required is a few russet potatoes, some butter, cabbage, kale, scallions and some milk. It’s a traditional dish that’s sure to hit the spot. I get so excited when I think of holiday food because I think back to the days when this type of thing began. I know it wasn’t always glamorous, but people sure did know how to cook. That’s for sure.
Ingredients
Serves: 4
4 Large Russet Potatoes, Peeled and Cut Into Large Pieces
Salt
6 Tablespoons Butter, Plus Some For Serving
3 Cups Packed Kale, Cabbage or Chard
3 Scallions, Chopped
1 Cup Whole Milk
I’d like to thank Simply Recipes for this recipe. While this same recipe is all over the place, we did use this one from this particular website, so they deserve the credit. Place the potato pieces in a large pot and fill that pot with water so it’s about an inch over the potatoes. Then, add 2 tablespoons of salt to the water and bring everything to a boil over high heat. Boil for about 15-20 minutes or until the potatoes are tender. You can tell by sticking a fork in them. After that, strain the potatoes in a colander. Using the same pot as before, add the butter to it and then melt the butter over medium-high heat. After that, add in the cabbage, kale or chard (or all three) – whichever you chose. Cook them down for about 4-5 minutes and then add in the scallion and cook for one minute more. Stir a bit as you’re cooking. Next, add the milk to the pot and mix everything together well. Then, add in the potatoes, mix and season with salt to taste. Reduce the heat to medium during this process. Divide the potatoes between bowls and add a pat of butter to each one. If you have any additional scallions, you can chop them and sprinkle them over the top as well. Enjoy! These potatoes are just too good. Especially with that butter in the middle.
