I’ve got a surprise for you today. An entire dinner recipe, all in one. I made this two days ago and I’m still thinking about it. We had some leftovers last night and wow, were they awesome. I absolutely love meals like this because all the ingredients cook at once in the oven. They’re self contained, which makes the process so much more simple. Not to say that this was a challenging recipe at all. As a matter of fact, it was rather easy.
The Recipe
Okay, get ready for this. This dish includes salmon, asparagus, potatoes, garlic and parsley with a butter, lemon juice and wine sauce. Add some salt and pepper and you’ve got yourself an insanely great tasting meal. If you’re a salmon lover, I probably don’t need to explain what’s going on here. Let me just say that the sauce is added to everything, which adds tons of flavor. It’s not only the salmon that’s good. It’s the asparagus and potatoes as well.
Ingredients
Serves: 4
1 Pound Red Potatoes, Cut into Wedges
2 Tablespoons Olive Oil
1 1/2 Teaspoons Salt, Divided
1/2 Teaspoon Ground Black Pepper, Divided
4 6-Ounce Skinless Salmon Fillets
2 1/2 Tablespoons Garlic, Minced, Divided
3 Tablespoons Parsley, Chopped
1/4 Cup Lemon Juice
1/4 Cup Melted Butter
2 Bunches Asparagus, Trimmed
2 Tablespoons White Wine
Step-by-Step Instructions

Pre-Heat Oven
Arrange one of your oven racks so it’s in the center position and the other so it’s in the top position. Then pre-heat the oven to 400 degrees.
Roast the Potatoes
To a large bowl, add the potatoes, olive oil, 1/2 tablespoon garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper. Toss until the potatoes are coated well with the oil and then spread the potatoes out on a large baking sheet. Place the baking sheet in the oven and let the potatoes roast for 20 minutes.
Prepare Dressing
To a medium sized bowl, add the lemon juice, melted butter and white wine. Also add in the remaining salt and pepper. Whisk well until the salt is dissolved in the liquid.
Roast Everything Together
Push the potatoes that are on the baking sheet to one side. Then, lay the salmon down at the center of the tray with the asparagus opposite the potatoes. Sprinkle the parsley and remaining garlic over the salmon. Then, drizzle the lemon juice/butter mixture over everything, concentrating it on the salmon and asparagus.
Next, place the baking sheet back in the oven for 10 minutes. Once that’s done, transfer the baking sheet to the top rack for approximately two minutes with the broiler on high. This last step is merely to give the ingredients some nice golden color. Keep your eye on things inside the oven as the broiler can get very hot and burn food quickly.
When finished, remove the tray from the oven, plate and serve. Enjoy!
The Final Roasted Salmon, Potatoes & Asparagus
I wondered how I was going to take photos of this dinner, but towards the end, I decided to go raw and on the baking sheet. I like this look a lot and it shows how delicious this type of meal can be.
