For some strange reason, activity has been ramping up in my life, so I’ve been looking for recipes for dishes that are quick and easy to prepare. Soups are notoriously simple, but we’ve sort of had our fill of them over the past few weeks. They are good though. I do love my soup. I’ve been in the mood for pasta and since we eat tons of seafood in this house, when I found a bowtie pasta and shrimp dish that takes less then 20 minutes to put together, I knew I found what I was looking for.
The Recipe
This dinner is a no-brainer when it comes to its assembly. All you need to do is cook the pasta and then throw the remaining ingredients in a skillet and cook them up. Later on, add the pasta to the skillet and you’re done. The primary components of this dish are bowtie pasta, shrimp and asparagus. The flavors are great and it’s just an easy, tasty, perfect way to end the day.
Ingredients
Serves: 4
1 Pound Bowtie Pasta
1 Pound Asparagus Bunch, Cut into Two Inch Pieces
2 Tablespoons Olive Oil
2 Tablespoons Lemon Juice
1 Pound Shrimp, Thawed and Peeled
4 Teaspoons Garlic, Minced
1/2 Cup Parmesan Cheese, Grated
1/4 Cup Parsley, Chopped
1 Tablespoon + 1/2 Teaspoon Salt
1/4 Teaspoon Ground Black Pepper

Cook the Pasta
Fill a large pot with four quarts of water and bring that to a boil over high heat. Add one tablespoon of salt to the water and then add the pasta. Cook according to the instructions on the box (10 minutes for al dente) and when it’s finished, strain it in a colander.
Cook the Asparagus, Shrimp & Garlic
Warm a large skillet over medium-high heat. Then, add the olive oil, lemon juice and asparagus to the skillet and stir for two minutes. After that, add in the shrimp and garlic and stir again. Cook for another three or so minutes or until the shrimp is completely colored.
Add Remaining Ingredients
At this point, you can turn off the heat. Then, add the Parmesan cheese to the skillet along with the parsley, salt and pepper. Mix everything together well.
Plate & Serve
Divide the contents of the skillet between plates and serve. If you have extra Parmesan cheese, it might be a nice idea to sprinkle some more on each serving. Enjoy!
The Final Shrimp & Asparagus Pasta Dish
I did enjoy this one a lot. I ate the entire thing over two nights and it was delicious. The only problem now is that it’s all gone. I also have to say that I love bowtie pasta for some odd reason.
