Ever since we went apple picking, we’ve been trying to use up all of our apples as fast as possible. These things don’t have a good reputation for staying fresh for all that long. The problem is, there’s only so much to do with apples. We’ve already made applesauce and we eat two apples every night in our salads. The only thing I can think of now is to prepare some apple cakes. Unfortunately, apple cakes don’t require that many apples. Two, maybe three at the most. But whatever. I really like apple cakes, so that’s what I’m going to do. I’ll just keep on free-eating apples to get rid of them if I have to.
The Recipe
I have already shared the most ultimate apple cake recipe on this website. I’m not sure it’s going to get any better than that one. That was was so moist it wasn’t even funny. The recipe I’d like to share today is good too and it’s got a sweet crunchy top, which I enjoyed immensely. The cake part of this version was exceptional, but not as exceptional at the bundt cake I shared. That other recipe called for more eggs and more apples. And more sugar. More everything I guess, which made it out of this world. Today’s recipe is much more modest, but it’s not as bad for you, if that’s an important element. It’s not good for you either, but then again, it is a cake.
The crunchy top is the best. It’s made out of white sugar, cinnamon and butter. What’s so nice about it is that the butter flavor really comes out after the cake is baked. And nothing beats a crunchy sugar topping. Let’s be real.
Ingredients
Makes: 1 Apple Cake
For the Cake
1 1/2 Cups Brown Sugar
1/3 Cup Olive Oil
1 Egg
1 Cup Buttermilk
1 Teaspoon Baking Soda
1 Teaspoon Vanilla
2 1/2 Cups Flour
1 1/2 Cups Apples, Chopped
For the Topping
1/2 Cups Sugar
1 Teaspoon Cinnamon
1 Tablespoon Butter, Melted
Step-by-Step Instructions

Pre-Heat the Oven
Arrange your oven racks so one of them is in the center position and then pre-heat the oven to 325 degrees.
Mix the Batter
In a large bowl, add the brown sugar, olive oil, egg, buttermilk, baking soda, vanilla, flour and apples. Mix these ingredients together well.
Mix the Topping
In a medium sized bowl, add the sugar, cinnamon and butter and mix well.
Add Ingredients to Pan
First, grease a 9″x13″ pan and then pour the batter into it. Then, sprinkle the topping evenly over the batter.
Bake the Cake
Place the pan in the oven and let bake for 45 minutes. When finished, remove the cake from the oven and turn off the heat.
Plate & Serve
This apple cake is perfect when it’s served warm. Slice the cake up, plate and serve. Add ice cream if you wish because, as you know, everything is better with ice cream.
